Dinner in Pozos, created by Chef Esmeraldo featuring foods from the province of Galicia. A dinner of Parrillada Gallega (earth and sea mixed grill) and Albarino wines.
An evening stroll.
Freshly squeezed orange juice and café con leche, followed by a leisurely breakfast.
Hands on cooking session with Chef Esmeraldo, this morning’s cooking session will incorporate traditional local cooking methods and techniques using an outdoor oven orwood-stove. A four course lunch will be created, along the way we will sample, taste, and savour the joys of cooking and creating. We will enjoy wines and cava from El Bierzo and Tierra de León.
Explore the terraced fields, oak forests, vegetable gardens, cows and chickens as we enjoy our nature walk.
Dinner in Pozos, created by Chef Esmeraldo with natural and when possible organic ingredients grown in the area. Specially selected Spanish wines, cava, cider and liqueurs with dinner.
Evening fire on the covered terrace.
A leisurely breakfast of fresh local products.
This morning (9am) join Chef Esmeraldo in creating a picnic lunch of wine, breads, local cheeses, Jamón serrano, cecina, lomo, chorizo, Spanish tortilla and a few special surprises.
Nature hike along the Rio Eria or up the mountain for valley views. Enjoy our lunch along the way.
Hands-on cooking session, for those who wish to participate, with Chef Esmeraldo. We will be creating Paella Iberica for our dinner. We will also create tapas to savour as we wait for our paella to cook. Jamón Iberico carving lesson. Specially selected Spanish wines, cava, cider and liqueurs with dinner.
Evening stroll to enjoy the stars.

DAY 4, 5 & 6 (Classic 5 nights/6 days)
Time to relax, hike on your own or a guided tour:
Option #1 – Excursion to the small villages of Truchas, Villar del Monte, and Corparales to explore the local history and farming methods. View Sacred Heart – Hike to Cristo de Valdavido perched high on a hill and built over the ruins of Count Ramiro Peno’s Castle and an old Roman fort. Option #2 – Hike to Lago de Truchillas instead of village/driving tours. Option #3 – Walk to Manzaneda via the Rio Eria where we will explore the old water mill.
Dinner created by Chef Esmeraldo using ingredients purchased from local markets and butchers. Tastings of Spanish wines and liqueurs.
Farewell dinner created by Esmeraldo with natural ingredients grown in the area, will be a Spanish degustación menu of 8 courses paired with spanish wines, cava, and locally made apple cider.
Day 6 – A leisurely breakfast of fresh local products. Check out of our Lodge.
